Healthy Summer Breakfast Recipes

Breakfast really is the most important meal of the day. It sets the tone for the rest of your day and gives you what you need to be energized and alert for whatever comes your way. Having said that, there is nothing worse than a bland, painfully healthy breakfast that will have you staring longingly at the sugary drinks and croissants on your way to work. We compiled some of our favourite breakfasts to ensure that this does not happen to you.

Fit Smoothies                  

We love making different variations of this smoothie. Switch up the fruits and veggies but try to keep your liquid as unsweetened as possible.

2 cups coconut water (approximate)
1 avocado
1 small scoop of ice
1 heaping handful of spinach
1 heaping handful of blueberries
1 handful of sliced strawberries
1 tbsp chia seeds

Place all items in a blender of any size (recipe fits a personal blender) and blend to desired consistency.

Light Egg White Omelet

3 egg whites
½ cup of spinach (or as desired)
½ cup chopped onion
4-5 grape tomatoes
Pepper to taste

Preheat your oven to 400 degrees F. Sauté your chopped onion until translucent. Once complete, mix in with the rest of the ingredients in a glass bowl. Place in a bake friendly dish and bake in the oven for 17 minutes. Serve with the fruit of your choice!

Fruity Acai Bowl

7 oz. frozen acai (available at Whole Food and several grocery stores)
1 cup frozen fruit of your choice (we love blueberries, strawberries and papaya)
1 banana
¼ cup granola (we love hemp granola)
¼ cup fresh fruit of your choice
2 sprigs of mint (optional)

Place all ingredients except for fresh fruit and mint into a blender and blend to desired consistency. If too thick, add coconut water as needed. Serve in a bowl topped with fresh fruit and mint.
